I made this super simple chickpea veggie bowl as part of my vegan challenge. I'm all about the bowls! Bowls of rice, quinoa, veggies, fruits, tofu, tempeh...there are just so many combinations you can create. And almost all of the elements can be made ahead of time + tossed together on the go. I love that. I've never been a big food prepper whatsoever, but I really like being able to just grab some cooked whatever + some kind of leafy green + mix it all into a nutrient-dense meal.
